Gaultheria owes its name to Jean-François Gaulthier, physician-botanist to the King of Quebec. He noted that the Inuit and Indians of Canada had been chewing or infusing Wintergreen leaves since the dawn of time to bring down fevers and soothe pain. The extract from its fruits can be used to flavor teas, candies, medicines and chewing gums. The fruit is also used to flavor ice cream in regions where the plant grows.
